This homemade Tomato Mascarpone Soup is creamy, rich in flavour and so easy to make!
Roast Tomato and Mascarpone Soup
- 750g Tomatoes, halved
- 2 tbsp Oil
- 3 garlic cloves, crushed
- 2 thyme sprigs
- 3 tbsp olive oil, plus extra to serve
- 2 tbsp Balsamic Vinegar
- 2 tbsp light brown sugar
- 1/2 tsp dried Basil
- 3 tbsp Mascarpone
Preheat the oven to 160°C, Gas mark 3.
Add the tomatoes (cut side up) to a large tray with the garlic and thyme leaves.
Drizzle with oil, vinegar and scatter over the sugar. Season and roast for 40 minutes.
Add to the Soup Maker along with the Basil and Mascorpone. Stir thoroughly.
Select the smooth setting and simmer till ready.
