Creamy Pea Penne Pasta
- 2 servings penne pasta
- 1/2 brown onion
- 50g cashew nuts
- Pinch sea salt and pepper
- 100ml water
- Olive oil
- Extra handful of peas for serving
- 75g frozen peas
- 2 cloves garlic- crushed
Cook the pasta according to the instructions on the packet.
Finely dice the onion and sauté this in a pan with a little olive oil until translucent. Add in the garlic and peas and cook until these are vibrant green in colour.
In your Ninja kitchen blender, combine the water, cashews, cooked peas and a generous pinch of salt, pepper, then blend until smooth and creamy. Add extra liquid if needed.
Pour the some of sauce over the cooked pasta ( I like to gradually add this in) and stir through some extra peas. Gently heat until piping hot before serving.
